
Tomato, Corn and Black Bean Salsa:
1 can finely-chopped fresh tomatoes, (Ro-Tel is a seasoned version we used)
2 cans black beans, rinsed and drained
1 cup thawed or fresh corn kernels
1/4 cup sliced green onion
1/4 cup finely minced cilantro leaves
2 tsp. extra virgin olive oil
1 avocado, cut into small cubes
1 Tbsp. freshly-squeezed lemon juice
1 lime, cut in half
Sprinkle lemon juice over avocado to prevent discoloration.
In medium bowl, combine all ingredients except lime.
Squeeze lime over mixed ingredients and give a final stir.
Serve chilled or at room temperature with tortilla chips.
We used blue corn tortilla chips with flaxseed (found at Target stores).
